Gotta Love Lemon!

When I was in high school I used to love going to this Chinese place called Mencius Hunan in Kingwood. It didn't matter if my family and I were going for lunch or dinner, I would always get the lemon chicken with fried rice. Now that I am a cook in training I have been searching the internet for dinners I can try out and just happened to come across a lemon chicken. The recipe was extremely easy and required marinating the chicken in lemon juice over night and until ready to cook. When I was ready to prepare the meal it required me to mix flour, salt, paprika, and pepper in a bag. Then place each chicken in the bag to be coated with the mixture. I then fried the chicken for 15 minutes and then placed the pieces in to a baking pan to cook in the oven. Before placing it in the oven I sprinkled brown sugar over each piece, mixed chicken broth and a little of the marinated together and drizzled it over the chicken. Cut a lemon up and placed slices on top of each chicken and popped it in the oven for 30 minutes. When the chicken was done and I took my first bite, it immediately took me back to my younger years eating at Mencius Hunan. Now instead of having to go to Kingwood for a nice lemon chicken I can just pop out my recipe box and make my own!
